Hello from Josh and Amber at Watershed Restaurant! United in our dream, we bring together local farmers and the community in a space where creativity in local cuisine thrives.

Our Diverse Culinary Backgrounds

After graduating from UNH in 1998, Josh embraced the hospitality industry, delving into restaurant and accounting management with Marriott Corporation, then exploring his culinary passion at Seedling Café in Nashua and Rustic Leaf in Milford.

Amber, passionate about vegetarian cuisine, made her mark with Jewell and the Beanstalk in Manchester, emphasizing pure, locally-inspired vegetarian fare.

Together, we revitalized Robie’s Country Store with Roots Café, nurturing a space that mirrored our farm-to-table philosophy and inclusive spirit.

A New Chapter at Watershed Restaurant

Our journey has now brought us to an exciting new venture. Transforming our previous endeavor, Roots Café, we’re moving to a new space within the same building to open Watershed Restaurant. This evolution marks a significant step in our mission to bring innovative, locally-sourced dishes to our community.
